Instructions:
Peel the sweet potatoes and cut into cubes. Add the olive oil to the pan, add turmeric, pepper, salt and sweet potatoes and mix. Close the lid and cook until sweet potatoes are soft. You may substitute pumpkin for sweet potatoes in this recipe. Rinse the baby spinach. Rinse the radish and cut into cubes with the peel on. Add the baby spinach, radish and goat cheese into a deep bowl. Place the sautéed potatoes and the prepared mixture on a serving plate. Sprinkle with pumpkin seeds and roughly cut walnuts on top and serve.
