Homemade Granola

Ingredients (20 servings)

  • 1/2 cup coconut oil (or virgin olive oil)
  • 15 large soft dates (finely chopped)
  • 1/2 teaspoon sea salt
  • 1 teaspoon vanilla extract
  • 1 egg white (can be substituted with 1-2 tablespoons of water)
  • 2,5 cups of gluten-free rolled oats
  • 1 cup Bahçeden Raw Almonds, Bahçeden Raw Hazelnuts, Peyman Pistachios mix
  • 1/2 cup sunflower seeds, sesame, Bahçeden Raw Pumpkin Seeds mix
  • 3/4 cup ground flax seeds
  • 2/3 cup dried fruits mix (such as raisins, apricots, cranberries)/Bahçeden Raw Dried Nuts Mix

Instructions:

Preheat the oven to 120 degrees. Mix coconut oil, dates, salt, vanilla and egg in a blender. Put the oats, sunflower seeds, sesame and pumpkin seed mixture, almond, hazelnut and pistachio mix together with the flaxseeds and dried fruit in a deep, wide bowl. Pour the date mixture in the blender into the bowl and mix with a wooden spoon until the ingredients are equally distributed. Pour the mixture into a medium baking tray lined with parchment paper and cook for 25-30 minutes. Then turn off the oven and let rest for one or two hours or preferably overnight before cutting into smaller pieces. You can keep it in an air-tight jar for a month or in the freezer for a few months.

Note: You can serve the granola with yogurt and fresh fruit. This crispy granola is filled with delicious nuts.
